Step-By-Step Egg Soup Recipe –

Ingredients:

(Serving – 2)

2 eggs

1 small-medium onion, finely chopped

1 small-medium tomato, finely chopped

1 tsp garlic, grated

1 tsp ginger, chopped

Salt to taste

Black pepper powder to taste

1 tbsp white vinegar

1 tbsp cornstarch

Salt to taste

Olive oil/ghee (clarified butter) for cooking

Coriander leaves/spring onion leaves for garnishing

Method:

Step 1 – Crack the eggs in a bowl and whisk well with some salt and black pepper powder. Keep aside.

Step 2 – Heat some olive oil or ghee in a pan. Saute onion, garlic and ginger till light brown.

Step 3 – Add tomatoes, salt, black pepper powder and saute till tomatoes wilt. Then add some water and bring it to a boil.

Step 4 – Add beaten eggs gradually while stirring continuously. Keep stirring till eggs scramble and cook.

Step 5 – Now mix corn flour with some water to make slurry and pour in the soup. Mix well and let the soup cook for around 5 minutes.

Step 6 – Add vinegar. If you don’t like the taste of vinegar, you can add a few drops of lemon juice instead. Mix well and turn off the gas.
